Meyer Lemon Brussels Sprouts Pizza

Bear with me now. Am I telling you to put lemons and Brussels sprouts on a pizza? Why yes, I am, but trust me on this. This pizza is so delicious.

Remember when I said just how excited we get when late winter brings the best of citrus season, including these golden gems called Meyer lemons. The slightly sweet flavor pairs really well with Brussels sprouts to temper the bitterness they can give off.

On a pizza baked in a 500 degree oven, everything gets browned, bubbly and crispy. So shredded Brussels sprout shavings turn into flavorful little chips and thin slices of Meyer lemons melt into juicy morsels. Olive oil as the base, a sprinkling of fresh rosemary and tarragon amp up the flavor profile, then this pizza gets finished with fresh burrata and parmesan cheese. The Burrata adds a necessary rich and creaminess, while the Parmesan adds pungent saltiness. There’s just so much going on with this pizza, but it is downright tasty.

I used this pizza dough recipe and to be honest it was just okay so not sure I’d recommend it despite it’s good ratings. The texture was pretty good – a little crispy and a lot chewy – but it really lacked flavor and it did not brown up as much as I expected. I LOVE the garlic herb and plain pizza dough from Trader Joe’s, plus it’s ready made, which is a win-win. We have made this pizza with the garlic herb pizza dough and it was amazing together. So that’s what I recommend using here!

Meyer Lemon Brussels Sprouts Pizza

Ingredients
  

  • 1 Pizza Crust
  • 1-2 Tbsp Olive Oil
  • 1 Shallot thinly sliced
  • 1/4 cup grated Parmesan
  • 1 cup shredded Brussels Sprouts
  • 2 Meyer lemons halved and thinly sliced (remove any seeds)
  • 4 oz ball of fresh Burrata
  • 1 sprig fresh Rosemary
  • 1 sprig fresh Tarragon

Instructions
 

  • Form your pizza dough into a thin round on top of a piece of parchment paper.
  • Brush with a thin layer of olive oil and then top with thin shallot slices. Sprinkle on 1-2 tablespoons of fresh parmesan and then an even blanket of sprouts. Next layer on the lemon slices and then the fresh Burrata. Slice the Burrata into thin strips and spread them evenly onto pizza. Finally, tear off individual Rosemary needles and Tarragon leaves. Place the whole leaves throughout the pizza.
