Uber fluffy, yet subtly crispy Belgian style, buttermilk waffles are a fickle thing to master, but once you do the reward is satisfyingly delicious.
We sure do love our breakfast food in this house! He loves pancakes, but I prefer waffles. He loves buttery maple syrup, but I’d choose berries and whipped cream any day over syrup. When it comes to the weekends, we like to live it up a little. I’m pretty sure I’ve said before that our go-to weekly breakfast is a protein shake with fruit because it’s quick, easy, and healthy. But come Saturday, we are making stuff like Banana Bread Pancakes or Soy Chorizo Breakfast Tacos.
So he set out to create the perfect homemade Belgian waffle recipe to go with the numerous pancake recipes we’ve already shared on here and to add to our growing collection of weekend breakfast choices. These met even my picky standards for a good waffle. 😉
The waffle maker we have at home is this one – for such an affordable price it does a pretty decent job. No, these are not true Belgian waffles with the super deep wells due to the type of waffle maker we have, but with this recipe you can achieve a similar texture.
Ingredients
- 3 eggs, separated
- 1 cup buttermilk
- 1/2 tsp vanilla
- 2 tbsp melted butter
- 1 cup AP flour
- 3 tbsp brown sugar
- 1/2 tsp salt
- 1 tsp baking soda
- 1/4 tsp baking powder
Instructions
Beat egg whites with clean beaters in a separate bowl, set aside.
Combine all wet ingredients in a medium bowl, except egg whites.
Combine all dry ingredients in a large bowl. Add wet ingredients to dry ingredients and stir to combine.
Fold in beaten egg whites.
Prepare according to waffle maker instructions cooking until golden brown.
Keep in a 200 degree warm oven until all are made and ready to serve.
Freeze leftovers and re-heat by toasting in the oven or a toaster oven.

This is perfect fuel for tackling all of those crazy homeowner DIY projects we’ve got on a Saturday. In fact, this weekend, we spent some time trying to finish up several little items on our to do list, like painting trim! Oh what fun! So these waffles made the perfect start to a busy day!
