Little Big Meal for Breakfast!

So The Fresh Market, a regional food market and premium quality produce store, has this awesome deal on Thursdays now that they call the Little Big Meal where you can get a complete meal to feed a family of four for $20!! They rotate each month and this month is breakfast for dinner. We love breakfast food, so we grabbed a meal one week to have for Saturday morning. And honestly shopping at The Fresh Market is a treat for us we do occasionally to spoil ourselves, so this felt like getting to spoil ourselves, while getting a great deal! Win win!

This month what you get:

  • Indian River Juice – Orange or Grapefruit
  • 1 Bag of The Fresh Market Mo’Jo or Just’Jo coffee – select varieties
  • Urban Accents flapjack mix – 4 choices of deep chocolate, blueberry lemon lavender, ginger carrot cake or potato, cheddar & chive
  • 1 dozen TFM Cage Free Large Eggs
  • And choice of meat – 1 lb of market style bacon, 1 lb of turkey bacon or 1 lb of breakfast link sausage

As you can see we chose orange juice, columbian coffee, the ginger carrot cake flapjack mix, and market style bacon (the hubs would kill me if I brought home anything else ;)).

We decided to bake the bacon instead of frying it up in a pan. I like cooking bacon in the oven because it’s way less effort, easier clean-up, it gets all of the bacon evenly crispy, keeps it straight and the grease drips off into the bottom of the pan! Oh and it doesn’t leave the house smelling like fried bacon for a week!Baked bacon

Here’s how you do it:

Preheat your oven to 375°. Line a baking sheet with foil, place a cooling rack or drip screen (like this one) on top of the foil. Line the rack with the strips of bacon – you don’t have to worry about leaving space between them because they will shrink, so squeeze as many pieces as will fit. Then just throw in the oven and back for 20-25 minutes or until as crispy as you like your bacon.

As the bacon was baking in the oven, we prepped the pancakes. Mixing up the batter was a cinch with the Urban Accents pre-made mix. We just needed to add milk, eggs and butter! Similar to whipping up some super easy bisquick pancakes, but WAY better. The batter smelled heavenly from the spices, carrots, walnuts and there’s even a hint of shredded coconut!

We love to use our electric griddle to cook pancakes on the weekend, so we broke it out to fry up the flapjacks!

Medium high heat – around 350º-375º – and a pat of butter will get you going. Our griddle is a Rival brand like this one.

Urban Accents suggested serving the flapjacks with a cream cheese glaze and toasted walnuts, so that’s exactly what we had to do!! While my handsome hubs was frying up the rest of the flapjacks, I mixed up a quick cream cheese drizzle.

To make the cream cheese glaze:

Cream Cheese glaze drizzle: Combine 4 oz softened cream cheese, 3/4 c powdered sugar, 1/4 c milk  until a consistency that drizzles. Add more powdered sugar to thicken or more milk to thin it out. Because this was a last minute decision, I softened the cream cheese in the microwave for about 20 seconds and that worked like a charm.

These turned out great! Almost sinful – it was like eating cake for breakfast!

To cap everything off, we fried a few of the eggs for some added protein – ya know…to balance out the carbs. 😉 Best Saturday morning breakfast in a while!
