Herby Dill, Garlic, & Lemon Green Beans

herby-dill-garlic-lemon-green-beans-04Another super quick and easy side dish for you to serve up this Thanksgiving? These uber yummy green beans turn a simple vegetable side into top dish on your table. And they come together in a flash. Toss fresh haricovert, which are classic French style green beans, into a boiling pot of salted water for 3-5 minutes to blanch them. Blanching vegetables allows something like green beans to be cooked just enough to make them soft to the tooth, but also to keep their bright green color. Blanching is a time-honored technique (and a secret weapon) in the food world for making vegetables that are flavorful and tender. You can blanch them and then top them with a sauce or seasoning or further flash saute them to crisp them back up.

herby-dill-garlic-lemon-green-beans-03So as I was saying, you blanch the green beans for 3-5 minutes, and in the meantime melt some butter and mix in Urban Accents’ herby dill & garlic seasoning packet with lemon zest and juice. After the green beans are done cooking, toss them in a bowl with the sauce and then zest some additional lemon rind over the top. Serve up immediately! That’s it – they are that easy! And they are delicious! So full of bright, citrus flavor! Lemony and herby. The dill is the perfect partner to the punch of lemon and garlic. In fact, these would be great cold as part of a Nicoise style salad. And if you plan to eat these cold, are blanching to par-cook the beans, or plan to further crisp them by sauteing, then shock them in a bath of ice cold water to stop the cooking process. This prevents them from over-cooking from residual heat and from turning dull instead of vibrant bright green!

Ingredients
  

  • 1-1/2 lbs green beans trimmed
  • 4 Tbsp melted butter
  • zest & juice of 1 lemon
  • 1 packet Urban Accents Herby Dill & Garlic Standout Sides

Instructions
 

  • Bring large saucepan of salted water to a boil. Add green beans and cook until crisp-tender, approximately 3-4 minutes. Drain; place in serving bowl. Meanwhile in small bowl combine melted butter, lemon zest, juice and contents of seasoning packet. Pour over cooked green beans and toss gently. Season with salt and pepper to taste; serve immediately.
