Creamy, delicious and healthy egg salad filled with avocado – lunch is served!
We get tired of eating the same old turkey sandwich or wrap or tuna salad day after day, so we are forced to get creative with our lunch choices and this one turned out to be quite yummy! Avocado really takes classic egg salad up a notch. It adds a super creaminess to the texture, yummy flavor, and amps up the health factor. Serve it up on toast to make a simple sandwich, over a bed of lettuce or in a wrap.
- 4 hard boiled eggs, chopped
- 1 stalk celery, diced
- 1 green onion, diced
- 1/2 avocado, chopped,
- 2 tbsp light mayonnaise (made with olive oil)
- 2 tsp regular mustard
- salt & pepper, to taste
Combine everything in a bowl, gently fold ingredients together taking care not to mush the avocado.
