Honey Ginger Roasted Sweet Potatoes with Pecans

Honey-Ginger-Roasted-Sweet-Potatoes-Pecans-01The classic Sweet Potato Casserole is a given at Thanksgiving for us. We mix in a little roasted banana and a splash of booze to dress ours up and it HAS to have the praline pecan topping. Check out that recipe here. But in the meantime, I wanted to share a slightly healthier and MUCH easier alternative to the sugar, egg, carb, fat laden casserole that always graces our table.

Honey-Ginger-Roasted-Sweet-Potatoes-Pecans-03Cube 2 pounds of peeled sweet potatoes, brown 3 tbsp of butter, toss with Urban Accents’ Honey, Ginger & Vanilla seasoning blend and 1/3 – 1/2 cup of chopped pecans, then roast for 35-45 minutes. Done and done. The honey, ginger, and vanilla seasoning blend is the perfect combination of flavors to season the sweet potatoes so that they don’t need any extra sugar. You don’t miss all of the extra stuff at all! These make a great weeknight side, but would totally satisfy your picky family at a holiday celebration too!

Honey Ginger Roasted Sweet Potatoes with Pecans

Print Recipe

Ingredients
  

  • 2 lbs sweet potatoes peeled and diced
  • 3 Tbsp butter
  • 1 packet of Urban Accents Honey Ginger & Vanilla Standout Sides
  • 1/3 - 1/2 cup pecans chopped

Instructions
 

  • Preheat oven to 400°F. Place sweet potatoes in large baking dish, set aside. Melt butter in small saucepan over low heat, stirring continuously. Continue stirring as the butter foams, watching carefully for lightly browned specks to form at the bottom. Immediately remove from heat and stir in contents of seasoning packet. Stir in chopped pecans. Pour mixture over sweet potatoes and toss until well combine. Cover dish with foil and bake for 15 minutes. Stir sweet potatoes, cover and return to oven for 20-30 minutes. Serve immediately.
