Going Green

September 5, 2011 by Kara 5 Comments

Oh what to do with those avocados? Aside from putting slices of them on a juicy burger, or a smoked turkey, goat cheese & balsamic vinegar sandwich…we make guacamole

This one is very simple, a party favorite and crowd pleaser.

What you’ll need:

  • 3 ripe avocados
  • 1 Jalepeno – De-seeded and finely diced
  • 1/2 red onion – diced (small)
  • Juice of 1 – 2 limes (more or less to taste)
  • Palmful of fresh Cilantro – Chopped
  • 1 Tsp Garlic powder
  • 1 Tsp White Pepper
  • Salt – to taste
We actually have the pleasure of owning a Molcajete.
But, no fear. You can use a regular bowl.
Step One: Mash the avocados. You want to leave them chunky.
Step Two: Add everything else.
Step Three: Mix it up.
Step Four: Enjoy. Add more salt and/or lime juice to taste.

Why am I not surprised that you own a molcajete? In any case, that recipe sounds like something that has potential to get me to like guac!

[…] These bowls take all of the usual makings of a fish taco night – the rice and beans and toppings – and throws them all into a bowl together. It’s a bit lighter on the calories only because you aren’t having that fish stuffed into a tortilla. They are perfect for Cinco de Mayo this  year!! Save those extra carby calories for more margaritas or chips and guacamole. Try our recipes for margaritas here and here and definitely our guacamole. […]
