Chocolate Snack Monster Cookies

These cookies are thick gooey rich chocolatey and filled to the brim with chocolate chips, mini M&M’s, marshmallow bits, and pretzel pieces. They are a snack lover’s dream! I wanted a brownie like chocolate cookie, but I thought filling it with some favorite snack mix-ins would be fun and add a  nice texture to these.

I love how the saltiness and crunch from the pretzels really tones down the chocolate so that these are not too rich. Can cookies be too rich? I mean, they are a dessert food after all. 😉

I’ve not had any “weird” cravings since being pregnant, but I have had a few serious cravings where my mind just cannot let something go until I get to eat it. These chocolate cookies were one just instance. I needed a chocolate chookie and I needed it soon! My first ever craving was actually an Asiago bagel with cream cheese and it had to be from Panera for some reason. It was weeks before I finally got one, but it was satisfying. With these cookies though, it made a TON of batter and since I really just needed one or two cookies to satisfy that craving, I decided to freeze the rest of the batter in case that craving strikes again. I hope the dough freezes well, but it should because it’s pretty similar to plain chocolate chip cookie dough. I’ll update back here later once I test it out and bake off another batch.

The other thing I love about these cookies? They are a one bowl kind of deal. You know where you can throw all of the ingredients into one bowl and not have a GIANT mess to clean up. Rem says I am notorious for making big messes in the kitchen whenever I cook, but especially when I bake, so less mess makes him happy for sure. 😉

They might just be the perfect chocolate cookie! And you can absolutely use whatever mix-ins you prefer here – try caramel chips and chocolate chips or toffee pieces with pretzels and chocolate chips or chunk of graham cracker with marshmallow bits and chocolate chips. Get creative, the world is your oyster so to speak.

Chocolate Snack Monster Cookies

Adapted from Cookies & Cups
Print Recipe

Ingredients
  

  • 1 cup cold butter cubed
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • ½ cup cocoa powder
  • 2 eggs at room temp
  • 1 teaspoon vanilla
  • ¾ teaspoon baking soda
  • ¾ teaspoon kosher salt
  • 2½ cups all purpose flour
  • 1 cup mini M&M's
  • 1 cup marshmallow bits
  • 1 cup pretzel pieces
  • ½ cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment mix the butter cubes until smooth, about 1 minute. Add in both sugars and continue mixing on medium speed for 2 more minutes until light and fluffy, scraping the sides of your bowl as necessary.
  • Next add in the cocoa powder until evenly mixed.
  • With the mixer still on medium add in the eggs one at a time, vanilla, baking soda and salt and mix for 1 minute until smooth, scraping the sides of the bowl making sure everything is incorporated.
  • Turn the mixer to low and add in the flour, mixing until just combined.
  • Finally stir in the M&M's, marshmallows, pretzels and chocolate chips.
  • Using a large cookie scoop drop the dough onto the prepared cookie sheet (about 2 Tbsp size). These do not spread much, so they will be big fluffy cookies.
  • Add a few M&M's and marshmallows to the top so they bake up with pretty visible filling pieces.
  • Bake for 10-12 minutes until the edges are set. Centers might seem under-cooked, this is ok.
  • Allow the cookies to cool for 3 minutes on the cookie sheet and transfer to a wire rack to cool completely.
