Roasted Delicata Squash

Ingredients
  

  • 2 Medium Delicata Squash
  • 2 Tbsp Olive Oil
  • 1/2 tsp garlic powder
  • 1/2 tsp red pepper
  • 1-2 Tbsp parmsan cheese
  • sea salt and pepper

Instructions
 

  • Preheat oven to 425
  • Rinse and scrub the outside of each squash, dry thoroughly.
  • Cut the ends off each squash, slice in half lengthwise. Scoop out seeds.
  • Slice each half into 1/2 inch thick crescents.
  • Arrange on a baking sheet.
  • Drizzle with olive oil and toss to coat.
  • Sprinkle with remaining ingredients and season with fresh cracked sea salt and pepper.
  • Roast for 25-30 minutes, turning every 5-10 minutes so that each side gets brown and crispy.
