Blood Orange Glazed Donuts

Ingredients
  

Donuts

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup granulated sugar
  • 1/4 cup milk I used almond milk
  • 1/4 cup plain non-fat Greek yogurt
  • 1 large egg
  • 2 Tablespoons unsalted butter melted
  • 1 and 1/2 teaspoons vanilla extract

Glaze

  • 5 1/4 cups powdered sugar
  • 1/2 cup plus 1 Tbsp fresh strained blood orange juice
  • pinch of salt
  • splash of vanilla
  • sprinkles

Instructions
 

  • Preheat the oven to 350F degrees. Spray a donut pan with non-stick spray. Set aside.

For the donuts:

  • Whisk the flour, baking powder, baking soda, nutmeg, and granulated sugar together in a medium bowl. Whisk the milk, yogurt, and egg together until smooth in a separate bowl. Add the melted butter and vanilla, whisking until fully combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. The batter will be very thick.
  • Spoon the batter into the donut cups, filling 3 ? 4 of the way full.
  • Bake for 12-14 minutes or until the edges are lightly browned. Allow the donuts to slightly cool before glazing.

For the glaze:

  • Whisk all ingredients in a large bowl. Add more powdered sugar to thicken or more blood orange juice to thin, as needed.
  • Dip each donut in the glaze three times allowing to set between each layer of glaze. Top with sprinkles. I found pouring sprinkles in a small bowl or plate and then pressing the donut into them made this much easier.
  • Enjoy the same day! As they sit the glaze will continue to soak into the soft baked donuts. You could try warming the glaze on the stove before dipping to help it set.
